Szechuan is a rion of Western China. Scechuan cooking is characterised by the skilful contrasting of many different flavours in a single dish hot, sour, salty and the extensive us of spices.
Peking is situated in northern China The cooking style is roasting, deep-boiling and barbecuing. Noodles and pancases feature in the menu and dishes are often flavoured with wine. The dishes are milder than their hot spicy cousins of Scechuan.
